In typical Western diets, dietary cholesterol intake does not vary independently of other components of diet: the foods that supply most dietary cholesterol (red and processed meats, full-fat dairy) are also major sources of saturated fat, and higher cholesterol intake tends to track with a broader pattern of less healthy eating. This makes dietary cholesterol a classic confounded exposure in observational nutrition research, because dietary cholesterol and saturated fat intake are positively correlated in such diets and high cholesterol intake also correlates with other unhealthy dietary and lifestyle factors. The confounding matters precisely because saturated fat raises blood LDL cholesterol, so an apparent effect of dietary cholesterol may partly reflect the saturated fat it accompanies.
